Stuffed Bell Peppers

Preheat your oven to 375°F (190°C). Lightly grease a baking dish large enough to hold the bell peppers upright

In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened and fragrant, about 2-3 minutes

Add the ground beef to the skillet and cook until browned, breaking it apart with a spatula as it cooks

Once the beef is cooked through, remove the skillet from heat and stir in the cooked rice and diced tomatoes

Season with salt and pepper to taste, and mix until well combined.
