In a large mixing bowl, combine the cooked corn kernels, finely chopped red onion, chopped cilantro, and crumbled cotija cheese or feta cheese

In a separate small bowl, whisk together the all-purpose flour, beaten eggs, baking powder, salt, and pepper until smooth

Pour the flour and egg mixture over the corn mixture in the large bowl. Stir until all the ingredients are evenly combined and coated

Once the oil is hot, drop spoonfuls of the corn mixture into the skillet, flattening them slightly with the back of the spoon to form fritters

Fry the fritters for 2-3 minutes on each side, or until golden brown and crispy

Once the fritters are cooked, remove them from the skillet and place them on a plate lined with paper towels to drain any excess oil

Repeat the frying process with the remaining corn mixture, adding more oil to the skillet if necessary
